東伊豆珈琲焙煎所は、伊豆半島の東海岸、温泉・観光地のおしゃれなカフェではありません。　堅苦しい流儀や作法で「焙煎、淹れるコーヒー」を飲むところでもありません。

人それぞれの思うやり方や楽しみ方でコーヒーを味わい、人々が集い語らう場所、「コーヒーから始まるリベラルアーツの交差点」になるような場所でありたいと考えています。そのために日々、終わりのない知識の探訪と試行錯誤の実践に励んでいます。これまでの既成概念に囚われず、自由な発想で、古きを訪ね、新しきを享受する。
そんな場所で笑顔で一杯のコーヒーを分かち合えたらと考えています。

Higashi Izu Coffee Roastery is not a place where you must adhere to rigid rules or formalities when roasting or brewing coffee.
We aspire to create a space where everyone can enjoy coffee in their own way, savoring its flavors, gathering, and engaging in conversation—a “crossroads of liberal arts that begins with coffee.”
To achieve this, we dedicate ourselves daily to the endless pursuit of knowledge, continuous experimentation, and breaking free from conventional ideas. With a spirit of open-mindedness, we explore the old and embrace the new.
In such a place, we hope to share a cup of coffee with a smile.

东伊豆咖啡烘焙所并不是一个讲究严谨礼仪和规矩来「烘焙、冲泡咖啡」的地方。
我们希望这里成为一个让每个人都能以自己喜欢的方式品味咖啡、享受乐趣，并且人与人相聚交流的空间，一个「从咖啡开始的自由艺术交汇点」。
因此，我们每天都在不断探索知识、反复试验，不断挑战传统观念，以自由的思维探寻过去、享受新事物。
希望在这样一个地方，我们可以带着微笑，共享一杯美味的咖啡。
